Chuka Soba Manchiken opened in April 2018 in Kinshicho as the second brand of Menya Sakana (麺魚), the wildly popular shop known for its rich sea bream ramen. While Menya Sakana focuses on fish, Manchiken is dedicated entirely to duck (kamo), making it one of the extremely rare duck-only ramen specialists in Japan. The broth is made using 100% duck and water only -- a whole duck is broken down, with the loin and thigh meat reserved for chashu toppings, while all remaining parts are slowly simmered to extract a pure duck consomme. The signature kamo chuka soba (salt) at 1,200 yen features this pristine duck broth with both loin and thigh chashu slices. From opening day the shop has consistently sold around 200 bowls daily.
