Ganso Akanoren Setchan Ramen is one of the oldest and most historically significant ramen shops in Fukuoka, founded in 1946 in the immediate post-war era. The shop is widely considered one of the 'source streams' that created the original template for Hakata ramen. The broth is simmered from pork bones for over half a day, producing a rich tonkotsu soup seasoned with soy sauce, giving it a distinctive character. The noodles are Fukuoka's characteristic thin style but with a unique flat (hiramuchi) shape, reminiscent of Inaniwa-style udon. The soup glistens with scattered back fat (seabura). Located on Nishi-dori in Tenjin, the shop was selected for Tabelog Hyakumeiten (Top 100) in 2024 and continues to draw crowds after more than 75 years.
