Ginza Hachigou was opened in December 2018 by Matsumura Yasushi, who spent 36 years as an executive French chef, including serving as head chef at the ANA Crown Plaza Hotel Kyoto where he was recognized as a 'Contemporary Master Craftsman.' After retiring, Matsumura realized that ramen could be 'a complete course meal in a bowl,' channeling his French technique into ramen-making. The shop is his third ramen venture after Chuka Soba Katsumoto in Suidobashi and Kanda Katsumoto. What makes Hachigou revolutionary is that it uses no tare (seasoning sauce) whatsoever -- instead, flavor is built entirely through a delicate soup of niboshi, chicken, and aged prosciutto ham. The restaurant earned Michelin Bib Gourmand in its very first year and has maintained the listing for 7 consecutive years.

ชามที่แอบว้าวเป็นการส่วนตัว แม้จะคาดหวังไว้เยอะด้วย (อดีต) ดาวมิชลิน ถ้าไม่รู้อะไรเลยก็เป็นชามที่อร่อยมากๆ ชามหนึ่ง ด้วยซุปที่กินง่าย แนวหมูอ่อนๆ กับกลิ่นพริกไทดำที่ไม่ค่อยเจอมากนัก องค์ประกอบเหมือนก๋วยจั๊บแต่ทำออกมาไม่ได้ทำให้นึกถึงเลย รู้สึกถึงราเมงญี่ปุ่นมากกว่า ที่ชอบสุดเห็นจะเป็น aftertaste ที่ค้างปาก นึกถึงนิโบชิแต่กลับใช้ เป็น Cold cut มาทำเลยออกมาอีกทาง …ร้านนี้แมสในหมู่นักท่องเที่ยว ใครจะไปต้องแพลนดีๆ
