Ginza Tsukiya opened in April 2024 on the 6th floor of GINZA SIX. It is the first Tokyo location of the Buta Soba Tsukiya brand, a spinoff of the long-established Shina Soba Tsukiya in Fukuoka. The Ginza location exclusively serves 'clear tonkotsu' ramen, where pork bones are slowly simmered to produce a completely transparent, consomme-like soup rather than the typical cloudy white tonkotsu broth. The result tastes unmistakably of rich pork bone umami while appearing as clear as a Japanese sumashi-jiru. Priced at 1,320 yen, toppings are served on a separate plate so diners can add them progressively.

ตอนไป hakata ไม่ได้ไปกินสาขาหลัก แต่แอบมากินสาขาที่กินซ่าก่อน ที่เห็นคือไม่ได้ตักหมู ผักออกนะครับ มันเป็นสไตล์ร้านนี้ ฮ่าๆๆ เป็นซุป Tonkotsu แบบน้ำใส มีไม่กี่ร้านที่ทำทางนี้ ซึ่งพอกินไป โอ้ มันได้ว่ะ รสหมูมาเข้มๆ เลย! ไม่ใช่ทรงเตี๋ยวหมูบ้านเรา รสกลิ่นแน่นกว่า เติมพริกไทเยอะๆ อาจจะไปทางก๋วยจั๊บได้เหมือนกัน : p
