Hakata Issou was founded in 2012 in Fukuoka by the Yamada brothers, who trained extensively at prominent ramen shops before opening at the remarkably young age of 25. The signature is its ultra-rich tonkotsu broth simmered for extended hours, producing a surface covered in fine, creamy fat bubbles that customers dubbed 'tonkotsu cappuccino.' The owner had been taught to discard such foam as impurities, but after going independent he deliberately preserved it, believing it delivered superior flavor. The noodles are thin and straight in classic Hakata style. In 2024, Hakata Issou was invited to join the Shin-Yokohama Ramen Museum.
