Haruchan Ramen is a tiny six-seat counter shop in Shimbashi run single-handedly by a female owner known as Haruchan, who opened in August 2021. The ramen features a clear golden salt-based soup built from pork knuckles, aromatic vegetables, and dashi -- originally using iriko (dried baby sardines) but later refined to ago niboshi (flying fish) for deeper complexity. The chashu is made from pork shoulder, slow-braised to tender perfection. The soup stays piping hot through the very last sip. The shop earned a Michelin guide mention and later opened a second branch in Tsukiji-Ginza.
