Ichigen

Ebisoba Ichigen's main shop sits a few minutes' walk from Higashi-Honganji-mae tram stop on the edge of Susukino, Sapporo — the original of the shrimp-ramen chain that later opened branches in Tokyo and beyond. The broth is built on sweet shrimp (amaebi) simmered into dashi and finished with shrimp oil, offered as shio, miso or shoyu, with the shrimp intensity and noodle thickness chosen at the counter. Sixteen counter seats, open late, and a fixture of Tabelog's Ramen HOKKAIDO 100 in 2024 and 2025.
