Menya Keserasera opened in 2008 in Sapporo's Kita Ward, founded by Yoichi Nakayama. The shop name comes from 'Que Sera, Sera.' Nakayama developed a distinctive tori-paitan shio ramen combining rich creaminess of long-simmered chicken stock with clean salt seasoning. The broth is made by slowly simmering chicken carcasses and chicken feet, then enriched by searing chashu pork directly in the soup. Nakayama intentionally created a ramen that children could enjoy too, reflecting the shop's residential neighborhood.
