Keyaki opened in November 1999 in Susukino, founded by Hideki Nitori, who previously ran a successful creative Japanese restaurant called 'Wabisabi' since 1983. Nitori left his fine-dining business to open Keyaki after being repeatedly asked for miso ramen recommendations by tourists. His philosophy is 'a one-dish masterpiece that appeals to all five senses.' The soup simmers pork bones, back fat, whole chicken, and vegetables for over 10 hours. The miso tare blends three types of miso aged for one week. The original Susukino location has just 10 counter seats, and the shop was featured at the Shin-Yokohama Ramen Museum.
