Menya Nanabe is a Sapporo-based ramen restaurant founded in October 2008 by Hori Hiroshi, who came from traditional Japanese cuisine (washoku). His culinary training gave him a refined palate for dashi, applied to creating elegant chicken-based ramen. The restaurant's main branch is in the Heiwa area with a second in Susukino. The lunchtime menu leans toward Asahikawa-style shoyu while dinner service offers Sapporo-style preparations.
