Menya Shono in Ichigaya is the flagship restaurant of the MENSHO group, opened in 2005 by ramen creator Shono Tomoharu. It was here that Shono first developed his philosophy of jikaseimen (self-made noodles) and original recipe creation. The shop specializes in rich gyokai and tonkotsu preparations, with tsukemen being particularly celebrated. All noodles are made in-house daily. The Ichigaya location retains its intimate, craftsman-focused atmosphere.
