Menya Takahashi was founded in October 2008 in Sapporo by chef Takahashi Akihiro, who trained at 'Tetsuya' before striking out with a mission to spread tsukemen throughout Sapporo. The signature tsukemen features a double-soup combining rich, odor-free tonkotsu with savory gyokai extracts. The thick, chewy noodles are specially designed for dipping. The miso tsukemen variant achieves a delicate balance. The restaurant is considered Sapporo's premier tsukemen destination.
