Noodles Ginza Onodera opened on May 1, 2024 as a new concept from the Onodera Group, with production by Chef Terada Keiichi. Terada trained at Quintessence (three Michelin stars) and later earned one star at Tirpse in a record two months. The signature duck ramen features a clear chintan broth enriched with roasted duck oil, paired with custom noodles from Hokkaido's Kitahonakami wheat. Toppings include roasted duck, pork chashu, and truffle wontons.
