Tori Shin-Yokohama

Rairaiken is a recreation of the legendary ramen shop originally founded in 1910 in Asakusa, which brought twelve Chinese cooks from Guangdong Province. At its peak, the original served 2,500-3,000 customers daily and is credited with igniting Japan's first ramen boom. The original closed in 1976. In October 2020, the Shin-Yokohama Ramen Museum revived the shop through collaboration with Shina Sobaiya and descendants of founder Ozaki. The recreated bowl uses chicken-based clear soup faithful to Meiji-era techniques.
