Sapporo Junren traces its origins to 1964, when founder Akiko Muranaka opened 'Junren' (originally read as 'Sumire') in Nakanoshima, Sapporo. After closing at peak popularity in 1982, the shop reopened in 1983 under the 'Junren' reading. Junren's defining innovation was a thick, rich miso broth sealed under hot pork lard. The secret fire-roasting method for the miso is closely guarded. This style spawned the 'Jun-Sumi kei' sub-genre, named after both Junren and Sumire. Their miso ramen is considered a prototype for modern Sapporo-style miso ramen.
