Shina Sobaya was founded on August 6, 1986 by Sano Minoru, widely known as 'the Ramen Demon.' Sano pioneered house-made noodles, domestic Japanese wheat, and obsessively sourced ingredients long before these were mainstream. He personally visited farms and producers across Japan. Sano relocated to Totsuka, Yokohama in 2008. After Sano's passing on April 11, 2014, his legacy has been carried on by his wife and disciples including Sugimoto Kosuke and Morrishima Hiroshi. The Shin-Yokohama Ramen Museum location continues serving bowls faithful to Sano's standards.
