Shio Ramen Shinka in Machida was founded in 2007 by Sekiguchi Shintaro, who trained at the Setagaya ramen group's 'Hirugazo.' He is known as a 'salt artisan' carrying over 30 types of salt. The broth combines gentle whole-chicken simmer with umami from 30 ingredients. Bowls are served in Arita porcelain. Shinka won two consecutive TRY salt championships and was ranked 4th in the Japan Best Ramen Awards.
