Higashi-Ikebukuro Taishoken is the birthplace of tsukemen, founded on June 6, 1961 by the legendary Kazuo Yamagishi, born in 1934 in Nagano Prefecture. As a young cook, Yamagishi would eat leftover noodles dipped in a separate broth as a staff meal. Yamagishi's generous spirit produced over 100 direct apprentices and more than 200 affiliated shops. The original closed in March 2007 due to redevelopment but was reborn in January 2008. Yamagishi passed away in April 2015 at age 80. The thick, sweet-and-sour dipping broth remains the template for tsukemen across Japan.
