Shina Soba Tantantei was founded in 1977 in Takaido by Toshi Ishihara, a former stage actor. The shop later relocated to Hamadayama, operating for over 47 years. Ishihara's style combines delicate Japanese-style dashi with exquisite hand-folded wontons wrapping both pork and shrimp fillings. Uniquely open with recipes, Ishihara spawned an entire lineage of influential shops including Kazuya and Yakumo. Tantantei's wonton men is consistently cited as one of Tokyo's finest.
