Raamen Yamaguchi in Nishi-Waseda opened in January 2013. The owner won runner-up at the Ramen Tryout before launching with the theme 'chicken only.' The signature 'Tori Soba' uses Hinai-jidori with Date-dori and Kibi Ogon chickens, plus Rausu kombu. The Aizu-jidori whole chicken is used at double the standard quantity, producing a golden, crystal-clear soup. The shop earned Michelin Bib Gourmand for 6 consecutive years and Tabelog Hyakumeiten for 3 years.
